These Garlicky Kale Bowls with Red Beans and Cauliflower Rice are a tasty and healthy way to eat. They make a filling lunch or dinner because they are full of flavor and healthy plant-based foods.
Ingredients:
- 4 cups of kale, stems removed and chopped
- 1 can 15 ounces of red beans, drained and rinsed
- 1 head of cauliflower, grated or processed into rice
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 lemon, juiced
- Salt and pepper to taste
- Optional toppings: avocado slices, cherry tomatoes, sesame seeds
Instructions:
Heat olive oil in a large skillet over medium heat
Add minced garlic and saut for about 1-2 minutes until fragrant
Add the cauliflower rice to the skillet and cook for 5-7 minutes, stirring occasionally, until it's tender and slightly golden brown
In a separate skillet, warm the red beans over low heat until heated through
Add the chopped kale to the cauliflower rice skillet and saut for another 2-3 minutes until the kale is wilted
Drizzle lemon juice over the kale and cauliflower rice, and season with salt and pepper to taste
Stir well to combine
Divide the garlicky kale and cauliflower rice mixture among 4 bowls
Top each bowl with the warmed red beans and any optional toppings of your choice
Serve hot and enjoy!
