Juicy chicken breasts stuffed with asparagus, Swiss cheese, and wrapped in prosciutto, cooked to perfection in a flavorful broth in the slow cooker.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 bunch of asparagus, trimmed
- 4 slices of Swiss cheese
- 4 slices of prosciutto
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 cup chicken broth
- 1 tablespoon minced garlic
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
Instructions:
Season each chicken breast with salt, pepper, thyme, rosemary, and paprika
Lay a slice of Swiss cheese on each chicken breast
Place a few asparagus spears on top of the cheese
Wrap each chicken breast with a slice of prosciutto
Secure the ends with toothpicks
Heat olive oil in a skillet over medium-high heat
Sear the stuffed chicken breasts until golden brown on all sides, about 2 minutes per side
Transfer the chicken breasts to the slow cooker
In the same skillet, add chicken broth and minced garlic
Bring to a simmer, scraping up any browned bits from the bottom of the pan
Pour the broth mixture over the chicken in the slow cooker
Cover and cook on low for 4-5 hours or until the chicken is cooked through and tender
Remove toothpicks before serving
