Vegan Lentil Walnut Tacos



There is a lot of flavor and protein in these vegan lentil walnut tacos. They are a satisfying meal for both vegans and non-vegans. They are simple to make, and you can add your favorite toppings to make them your own.

Ingredients:

  • 1 cup cooked lentils
  • 1/2 cup chopped walnuts
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 8 small taco shells or lettuce leaves for serving
  • Optional toppings: diced tomatoes, avocado slices, shredded lettuce, salsa, vegan cheese

Instructions:

Put olive oil in a pan and heat it over medium-low heat

Cut up the onion and garlic and add them

About 3 minutes of sauting will soften the meat

Add chopped walnuts, ground cumin, chili powder, paprika, salt, and pepper, and mix everything together

Cook for another 5 minutes, stirring every now and then

Get the lettuce leaves ready to serve or warm up the taco shells

Put the lentil and walnut mix into lettuce leaves or taco shells

You can add whatever you like on top, like salsa, vegan cheese, diced tomatoes, avocado slices, or shredded lettuce

Serve right away and enjoy!
